Lihua Fan


Dr. Fan is a food microbiologist working at the Kentville Research and Development Centre, Agriculture and Agri-Food Canada (AAFC) since 1998. She received her Ph. D from China Agricultural University in 1991. Dr. Fan has successfully led many national and international collaborative research projects. Her research has been mainly focused on food safety and quality related areas including developing innovative technologies to control post-harvest decay of horticultural produce, ensuring microbial safety/quality of whole and fresh-cut fruit and vegetables, controlling heat-resistant molds to extend shelf life of processed food products, developing novel natural antimicrobials from plant and bacterial origins for food protection, and applying fermentation technology to improve flavor and nutrition of value-added foods. Dr. Fan is a professional member of the International Association for Food Protection (IAFP), and the Institute of Food Technologists (IFT). She is a Certified Food Scientist (CFS), a professional honor recognized by IFT. Dr. Fan is a member of the selection committee and evaluation group for the Natural Sciences and Engineering Research Council of Canada (NSERC-Discovery Grants). She is an adjunct professor of Dalhousie University and Saint Mary’s University in Canada.
